Chia Seed Pudding with Mango
Ingredients
• 1/3 cup Chia Seeds
• (1) 14-ounce can Coconut Milk
• 3 – 4 Tablespoons 100% Real Maple Syrup
• 1 teaspoon Vanilla
• 1/4 teaspoon Sea Salt
• 1/3 cup Unsweetened Coconut Flakes
• 1 Mango diced
Instructions
•Place chia seeds in a bowl.
•Whisk chia seeds, coconut milk, maple syrup, vanilla, sea salt, and coconut flakes together in a bowl, Stir well.
•Cover bowl with plastic wrap and let chill in refrigerator for at least 4 hours or overnight because the chia seeds time to expand and soak in all oft he coconut milk. Because of this the chia seeds are getting soft.
•Once the chia seeds have expanded and softened, stir and top with fresh mango. So the best way is to add the fresh mango slices when you are ready to serve the mango coconut chia pudding.
